Welcome to episode 1 of my fall baking series where we bake all things cinnamon, spice and pumpkin!! To kick start this exciting and delicious series I got a recipe for the BEST apple crumble you will ever try. Think of warm, sweet cinnamon apples with a salty crispy butter crumble and a glop of thick tangy greek yogurt...oh my, my mouth is actually watering. make this for breakfast or even as a simple post dinner sweet treat and it's bound to make you feel 10 times better.

Single serve apple crumble

Ingredients :
1 green apple (red apples should be fine too!)
cinammon
2.5 tbsp butter
1/4 tsp salt
2 tbsp brown sugar
3 tbsp plain flour (can be subsituted for other kinds of flour/just more oats)
2 tbsp oats
Steps:
Preheat oven to 180°/375F
dice 1 green apple into small cubes and add it into a small saucepan along with 1 tbsp brown sugar, 1/2 tbsp butter and a bit of cinammon
Cook the apples over medium heat until slightly soft and covered in a brown syrup.
In a small bowl, add 3 tbsp plain flour, 2 tbsp oats, 2 tbsp butter (room temp), 1/2 tsp salt, a sprinkle of cinammon and rub it between your finers or with a fork until combined and can clump together (if its too wet/sticky then add more flour, if too dry and can't stick together then add more flour)
In a ramekin or a small oven safe bowl, add apple mixture, then top with the crumble (breaking it apart with your hands so that is evenly spread out over the apples)
Bake in the oven for about 6-8 minutes or until the top is golden brown and feels crispy.
Top with a scoop of vanilla ice cream or a dollop of tangy greek yougurt and ENJOYYY!!
